I'm not sure how many your cooking for, so I won't give quantities, and nobody reads them. This is not baking! Let's all have some fun. Its a trial and error life.
The Great Stuffed Potato
If you want to show some love, this is the recipe. This is a true "show me what you got." The simple but truly healthy potato gives you ample room to be creative. The only challenging thing here is to get to the store and get what most kitchens do not have, a piping bag and tips. If you don't have one, go get one, there a good tool and fun.
Ingredients
What ever your heart desires but here are a few suggestions. Keep the dairy products light to keep calorie and fat count low. Parsley for health and color, onions, green leafy vegetables, artichoke, corn, asparagus tips, broccoli, kidney beans,, lean beef or chicken, carrots, your favorite cheese, a little pepperoni for a great flavor, bell pepper, la la la, bla bla bla bla. Also stuffed potato's will last three days in refrigerator and freeze great.
Method: Poke potato with sharp instrument so it don't go boom in oven. Yep, I done that a few times. Did I clean it? No, just baked it off in the oven over time. Bake potato until soft, let cool, cut down the middle, and scoop out the potato with spoon. Add your favorite ingredients and some butter and milk or cream to soften potato so it will go through the piping bag in your mixing bowl. Mix it up and taste and adjust, taste and adjust. Top with a little cheddar cheese and melt in oven. Finish with more parley and paprika for garnish and serve
Tip 1, peel a few extra potatoes and mash them and add them in with ingredients and potato so you will have enough potato to make a nice high crown of potato stuffing to fill your potato with piping bag, and have fun.
Tip 2, If your not getting along with your significant other and they are ignoring you or just being plain stupid. Wing one of these babies across the room, not a hot one. They are like little hand grenades. They splat great against a wall, window, etc, and don't clean it for a week, and don't say a word either. Lets see who gets their point across, but most important, who cleans it. It's always a battle of wills.
Cream of Tomato Soup
Lets go with something healthy!
This soup recipe is healthy for your heart, kidneys and liver. If you are maintaining a healthy lifestyle and calorie count this is a great low fat recipe. You will need a blender or food processor for this recipe.
Ingredients
Blender/food processor
Fresh tomatoes
Onions
Garlic
Carrots
Celery
Parsley, add after the soup is finished and on top for garnish
Salt, just enough for flavor or use chicken base.
Wine or a little water to help the vegetables steam
Pepper (don't be shy, a good source of chromium)
Lemon
Butter/optional
Cream/optional
Parmesan, right before serving
Method: Yes this is a labor intensive recipe but it is your health here and your health is worth the effort. First the tomatoes, we want to get the skin off. Get a pot of boiling water, slit your tomatoes at the tip with a small x, then place into boiling water for five minuets, remove then cool in running water, peel. OK, now we need to peel and steam the carrots to give them a little head start. Next, in another pot place all your ingredients here accept for the cream and parsley. Don't dice vegetables small, keep in large chunks. Put no more than a 1/2 tsp of butter per 12 ounce serving to keep calorie count low. Important, do not over cook the vegetables or the nutritional value will be lost, keep them el dente. When your mix is cooked lightly, over to the food processor. Let the machine do the chopping for you and it leaves your soup with a great texture. Now all goes back into the pot with 1 oz of cream per 12 oz serving for a low calorie count. Bring soup to a light simmer and off the stove, add parsley. If the soup is to thick for you, add a little water. Now we have something that tastes great and is healthy. If you are on a diet and exercising to lose weight but want some protein in your diet add some lean, diced grilled chicken breast to your soup or to fu if you are a vegetarian.
Tip, Go to the junk store and buy used blenders. The multiple uses of a blender can never be under appreciated for cooking or getting even. For the lip stick you found on his shirt, or the phone number you found snooping in her hand bag of your supposed friend. It works wonders on a favorite golf ball, nick knack, even a sweater if you take your time. Remember to wear safety goggles on anything harder than her damn kitchen magnets.

Method; First things first. I would cut about a 1 foot piece of sausage, invite your significant other or kid in the kitchen and just start shaking it at them, get your point across, Ok. Dice chicken and sausage, get your 2 favorite pots. Pot 1, cover bottom with oil or butter, add chicken, sausage, spices, and veggies, cook until el dente, then add shrimp in the last minuets, taste and adjust, taste and adjust. Pot #2 is were you cooked your rice at the right time at a 2 to 1 ratio of water and rice with a little butter and followed instruction so as not to over cook. If want, add pot 1 and 2 together or serve pot 1 over pot 2. Tell your significant other you love them or something nice to your guest's. Great with cold beer or wine, enjoy!
Secret, smoked sausage, el dente rice and vegetables, not a wad of mush, and don't make it to hot, have Tabasco at the table or your favorite sauce so guest's can add more heat if they desire.
